Easy Strawberry Icebox Cake - By Jerri Goulet, IHP Admin Support

Jerri's Strawberry Icebox Cake Recipe














Ingredients
*3 cups cold heavy whipping cream
*3 Tbsp of granulated sugar (you can add more tbs if you like it sweeter)
*1 tsp vanilla extract
*1 lbs of strawberries, trimmed and sliced
*1 box of ladyfingers or graham crackers
(you can also use sugar cookies or whatever cookie you prefer)

Directions
  1. Prepare whipped cream by whipping heavy cream with sugar and vanilla extract using a hand mixer or a stand mixer with whisk attachment on medium-high speed until peaks form.
  2. Spread a thin layer of prepared whipped cream in a square glass baking dish.
  3. Layer ladyfingers or graham crackers (use one that you prefer) on top, then over with a layer of whipped cream.
  4. Layer sliced strawberries on top, then layer with cream again.
  5. Repeat steps 2 and 3 until no more ingredients remain (The top layer should be strawberries).
  6. Refrigerate for at least 3 hours and enjoy!
Tip: Save the "prettiest" strawberry slices for a nice presentation on the top layer.
